Zesty Lemon & Ricotta Gnocci - Recipe

For a really tasty Spring recipe that is very easy to prepare this zesty gnocchi recipe is perfect. Gnocchi are little pillows of loveliness, an Italian dumpling they are made using semolina, flour and potato and can be enjoyed throughout the year. I have to confess that in this recipe I have bought pre-made gnocchi for a super quick evening meal but I would definitely give making gnocchi at home a go at some point. 

I know it might look a little bit of a mess, it is an all in one kind of dish but it tastes delicious!




Recipe (Serves 4)

1 pack of fresh gnocchi
1 pack of pancetta or bacon lardons
335g cherry tomatoes or sun dried (both work equally as well)
80g ricotta 
100ml creme fraiche
Zest and juice of 1 lemon
A handful of fresh parsley, chopped
300g dwarf beans, trimmed
Rocket salad to garnish

Method

1. In a frying pan cook the pancetta/lardons over a high heat until nice and crispy. Add the cherry/sundried tomatoes and fry for another minute. Remove from the heat. 

2. In a bowl mix the ricotta, creme fraiche, lemon juice, zest and parsley together. Add this to the pancetta and tomatoes. 

3. Bring a pan of water to the boil and add the beans, boil for a couple of minutes and then add the gnocchi to this, cook for around another 3 minutes. The gnocchi will float to the top when ready, drain this and add to the creamy mixture and stir in gently to combine. 

4. Serve on plates and add a handful of rocket to garnish, drizzle with balsamic glaze.

  1. This looks a bit too creamy for me, but I love the idea of a one-pot gnocchi dish, I haven't had gnocchi in years! It looks yummy on the bed of rocket salad. x
