Mama's Carrot & Coriander Soup Recipe


I don't often post savoury dishes but I couldn't resist sharing this delicious soup with you, I love making soups they are simple, delicious and cost effective. I have a soup maker which also means less washing up but obviously can made in a pan and then use a blender which is just as effective. I've adapted this recipe to be cooked in a pan and from my Mum's original recipe (she uses some leeks and dried coriander where as I don't use leeks and I use fresh coriander but both are equally as nice).

Recipe

Ingredients

1 onion
2-3 gloves of garlic, crushed
1 pack of carrots (about 1kg)
1 pack of bunched coriander, chopped
1 - 2 cubes of vegetable or chicken stock
Salt & pepper to season
Creme fraiche to dollop on the top
Crusty bread to serve

Method

1. Grate or chop the carrots into small(ish) pieces. Heat some oil in a large pan, add some chopped onion and gently cook out for a couple of minutes until soft and then add the garlic and cook for another couple of minutes.

2. Add the carrots and cook for a couple of minutes until there is a little colour to them.  Add the vegetable stock and  bring to the boil. Reduce to a simmer and cook until the carrots have softened. Add the coriander (this can be as much or a s little as you want). Season to taste.

3. Once the carrots have softened blend until smooth, you may want to check the seasoning at this point. 

4. Serve with crusty bread, a dollop of creme fraiche and a sprinkling of chopped coriander. Delicious!!

  1. Can't say I've ever come across a carrot and coriander soup I liked, but maybe my problem is that I always buy them and shop-bought soups are never as good as home-made are they?! Great recipe :)

    1. I'm not a massive fan of coriander (if we're being honest!) but in this it takes on a different taste, not overpowering. You could perhaps substitute the coriander for something else perhaps like chilli flakes? Thanks for the comment XX

  2. I am not a huge fan of creamy soups... if that makes any sense. I love a good home made vegetable soup though, shove everything in the pan with some water and away we go.

    I am sure this is lovely but not one for me :)

    1. Well it's not overly creamy as there is no cream added :-) you can omit the dollop of creme fraiche obviously. It is more like a veg soup really, thanks for the comment hun XX

  4. corriander is one thing I have never really ahd the fancy for trying or ever tried yet, I really should indilge in trying new foods , i make all mine homemade and fresh but my variety is becoming terrible and i need more interesting flavours x
